Eggs in a Basket Recipe (in pictures)

Food is easily one of my favorite topics, as you can tell. The other day, I posted about breakfasts and as I sat down to the computer this morning, my preteen sits with me a bit. It's rare for it to only be us two early in the morning.  We speak of being hungry and I said "Well, how do you start cooking for two...and when you're done, a third person wakes up? It's often better just to wait until all 5 people are awake." Her response was great, "My sisters don't like the eggs in a basket. We could make that." 

Here are some photos of the Eggs in a Basket (again, I wish I could locate the original website, maybe it was a page of a bunch of low-carb ideas?) At any rate, I wanted to show how easy these low-carb baskets are to prep and then put into the oven. Most people need visuals (I love them myself, when I sew I'm more likely to follow the pictures than actually read the directions).
Cut the bacon like so and watch how we make them into baskets!

I only prepared 4 of them because we'll each eat 2 (well, Ravyn could eat more on certain days). Make sure to spray your pan! It is so much easier to take the baskets out if you use a nonstick spray; it's also easier to clean your muffin tin).


Oh, I certainly don't have a pretty muffin tin, but I suppose that tells you how much cooking time that bad baby gets!

I cook the baskets in the oven for about 25 minutes (I apologize for inaccurate cooking directions because my old stove is wonky). I love easy prep meals like this. I can get other tasks completed in the meantime (like starting the blog this morning). I have made extra baskets before and stored them in the fridge as a snack later. 

See how easy it comes out because I remembered to use PAM cooking spray? I would have had a wrestling match on my hands otherwise.

I can see so many benefits in an easy meal like this. One of the best benefits of this dish is that it's cheap. My grocery bill this summer is astronomical with my three bottomless pits. If you have family visiting, you can prepare 12 cups for 6 people in one muffin tin and you've spent maybe $3.50-5 depending on the bacon, maybe $7 for thick-cut, maple flavored (1g of sugar) and a dozen eggs (maybe $1.70). You've fed your family and guests for under $10 and you didn't spend your time in the kitchen (and you didn't spend a bunch at McDonald's). You were visiting instead. 

I found all three ingredients at my local HEB. Three ingredients! How cool is that!?
